Hi guys! Welcome back to my channel 🙂 In today’s video I’m sharing a yummy, easy recipe for raw carrot cake bites! They are made from whole food ingredients, don’t contain any refined sugar or flour, and are paleo, gluten free, & vegan! RECIPE:
Base:
1 cup shredded carrots
1 cup walnuts
1 cup pitted dates
1/2 cup unsweetened coconut flakes
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground ginger
Icing:
1 1/2 cups soaked cashews (soak overnight)
1/3 cup coconut oil, melted
1/3 cup maple syrup
1 tsp cinnamon
Juice of 1/2 lemon

Directions:
1. Add all base ingredients to food processor. Process until stick dough forms
2. Spoon carrot cake dough and press into mini cupcake tin (or press into bottom of pan to make a cake/bars)
3. Place cupcake tin into freezer
4. Place all icing ingredients into food processor and process until smooth
5. Remove cupcake tin from freezer. Place generous amount of icing into each carrot cake bite, and then top with walnut pieces
6. Place carrot cake bites back into freezer for 15 minutes to allow icing to stiffen
7. Enjoy!!
(Make sure to store in freezer)

  1. Hi Becca! I have a nutrition question for you.

    I've been trying to get on track with being healthy and have been eating mostly non processed foods and tracking it all with MyFitness Pal. I've been having (on average) between 1,100 and 1,400 calories per day and I'm finding it difficult to stick to fruits, veggies, and meat to get enough calories without going over the fat, sugar, and sodium levels that the app set as goals.

    It's been about 2.5 weeks of doing this and I'm exhausted, haven't lost any weight, and eating is no longer enjoyable.

    Am I doing this wrong? Am I having enough calories? How do you get enough calories off of non processed foods? (Especially since I'm not a huge fan of meat)

  9. You should do a home-made Lara Bar video! The main ingredient is dates, so it would probably be pretty similar to this.

  14. Hey Becca! May you please do a video on how to eat healthy and get fit with a busy schedule. Im 17 and work 2 jobs (1 as a student worker and 1 actual real world job) working, there is always a period of time I have without eating (9 hours) and it results to me rushing and eating unhealthy falling off track. So a video on how to get fit and eat healthy on a tight schedule will be great also because I know a lot of people struggle with that too.
